Sweet and Sour is the fifth episode of the second season and overall the twenty-sixth episode of Shining Time Station.
Plot
The kids are selling lemonade and cookies. While initially they fare well, Schemer and his nephew Schemee encourage them to raise the prices and sell low-quality products for better profits (ex. watering down the lemonade and putting black pepper in the cookies). When the kids begin to regret taking their advice, as no one seems to like the new cookies or lemonade, Schemer takes over their stand.
The kids vent to Billy about this, and Billy sees it as a learning experience. Schemer and Schemee taught the kids the wrong way to run a lemonade stand, and they'll do better next time. In the meantime, Stacy, with some remaining lemons, helps the kids make some other refreshments with lemons, like pies, tarts, cookies, etc.
Midge Smoot, who is hosting a garden party, had wanted to use the kids' cookies from the original lemonade stand refreshments. But she, ends up picketing the stand, (with Schemer in charge) because of how awful they are. She immediately changes her tune, when the kids show her their new, better-quality products, and welcomes the kids to her party! Before leaving, Midge warns Schemer and his nephew that if they pull another get-rich quick scheme, she'll bring in the Friends of the Flowering Cactus Ladies Auxiliary into the station to destroy his arcade which Schemer quickly tries to get her to reconsider as his mother's in that group. Once the two leave, Mr. Conductor appears enjoying their new stand and slogan, 'Honesty is the best policy.'

- There were many changes made to the Fox Family and Nick Jr. variants. These include:
- Fox Family:
- Mr. Conductor's lemonade drinking scene is slightly shortened.
- An unused shot of Dan saying, "But he's our partner" to Mr. Conductor is used.
- Mr. Conductor's explanation on partnership is cut.
- Mr. Conductor saying he never told the kids about Donald and Douglas is shortened.
- An unused shot of Schemer leaving behind the kids is used for when the banner appears to go to commercial.
- The kids getting excited about making money at the garden party is cut.
- Billy telling the kids that Schemer did them a favor of being taken out of the lemonade stand is cut.
- Mirrored footage from Achoo is used to put a nickel in the Jukebox to start Erie Canal. Due to this, the Jukebox Band's prologue before beginning Erie Canal is cut.
- The Deputation is cut from the airing.
- Because "The Deputation" was removed, the shot of the kids' new stand revealed immediately goes to Schemer and Schemee seeing their new stand when Erie Canal ends. The song's fade is also slightly longer.
